Vegetable Tart

Ingredients:

1 Kumara or Sweet Potato
1 Potato 1 Capsicum
1/2 Red onion 10 Stalks of asparagus

1/2 cup Ingredients :
1 Kumara 1 Potato
1 Capsicum 1/2 Red onion
10 Stalks of asparagus

1/2 cup Ingredients :
1 Kumara 1 Potato
1 Capsicum
1/2 Red onion
10 Stalks of asparagus
1/2 cup COCAVO Chilli and Lime, melted
Two sheets puff pastry

Garnish :
1 Tomato chopped
1/2 Avocado cubed
Handful of chopped basil
Juice of 1 lemon

Method:

1 Cut kumara and potato into same sized cubes.
2 Cut the capsicum lengthways and slice the red onion.
3 Cut the ends off the asparagus (about 1 inch).
4 Lay all vegetables on a lined baking tray.
5 Pour over the melted COCAVO and season.
6 Toss vegetables so they are evenly coated.
7 Place in preheated 180C oven and roast for 25-35 mins.
8 While the vegetables are cooking.
9 Place the first square of puff pastry on a lined baking tray.
10 Cut the second piece of puff pastry into vertical quarters.
11 Take one of the long pieces of puff pastry and lay on one of the sides of the square.
12 Press down the sides and fold quarter in half.
13 Curve the pastry up to form a wall.
14 Make sure both pastry pieces are pressed together so there are no gaps.
15 Repeat this step with the other three pieces of pastry to form a square tart case.
16 This can be rough and doesn’t have to look perfect ( it puffs up when cooked and gets rid of any rough edges)
17 Place pastry in an oven preheated to 180C and bake for 10-15mins or until golden brown and puffy.
18 When you remove pastry case from the oven you may have to push down the centre to get rid of excess air, and to allow a flat surface for vegetables to lie on.
19 Transfer the roasted vegetables to the middle of the puff pastry. 20 You may put back in oven for a few mins to warm the pastry, this dish is perfect served warm or cold.
21 Squeeze over lemon juice.
22 Arrange tomato and avocado in the centre and sprinkle over a few basil leaves.
23 Season and drizzle with glazed balsamic vinegar. Serve immediately.
