Turmeric and Lemon Cauliflower Salad

This healthy salad will surely put a smile to you face. Check out the recipe here:

Ingredients:

1 Head of cauliflower
1 Can chickpeas (rinsed and drained)
1 Tbsp ground turmeric
1 Tbsp cumin seeds
1 Tbsp fennel seeds
1/2 cup COCAVO Turmeric & Lemon
Juice of half a lemon
Salt and pepper to season

Method:

1 Cut cauliflower into florets.
2 Place cauliflower on a lined baking tray with the chickpeas.
3 Pour over COCAVO oil, turmeric, lemon juice and cumin and fennel seeds.
4 Toss cauliflower and chickpeas until all are coated evenly.
5 Season.
6 Place in preheated oven 180C, for around 30mins.

Dressing:

1/4 Aioli or Mayonnaise
1 tbsp COCAVO Turmeric & Lemon
Juice of half a lemon
Salt and pepper to season

Method:

1 Place all ingredients in a bowl and mix together.
2 Leave in the fridge before serving.

Topping:
Pomegranate seeds ( from one pomegranate )
1 avocado a handful of coriander

Arrange cooked cauliflower and chickpeas on a platter, drizzle over the dressing and sprinkle avocado, pomegranate and coriander.
