Paleo Chocolate Mousse Tart

Paleo Chocolate Mousse Tart

Try this great Paleo Chocolate Mousse Tart Recipe that uses both the Original COCAVO and also the COCAVO Chilli & Lime.

It looks so decadent and is so good for you!

Crust:

¾ cup unsweetened Desiccated Coconut
2 ¼ cup Almond Meal
1/3 cup melted COCAVO Original Coconut and Avocado oil plus extra for greasing
1/3 cup honey/ or maple syrup

Filling:

1 cup Coconut Cream
1/2 cup COCAVO Original Coconut and Avocado oil
1/2 cup COCAVO Chilli and Lime Coconut and Avocado oil
½ cup Cacao Powder
1/3 cup Honey / or Maple Syrup
For decoration (optional) – Almond Flakes
Dark Chocolate

Instructions:

1 Preheat oven to 180C.
2 Grease 9-inch pan with extra coconut oil.
3 To make the crust, place the almond meal, desiccated coconut, raw coconut oil and honey/maple syrup in a bowl and mix to combine.
4 Transfer the dough to the prepared pan and evenly press the dough onto bottom of the pan.
5 Bake in centre of oven until golden and firm, about 12-15 minutes. 6 Remove from the oven and let cool completely.
7 To make the filling, place all the ingredients in a saucepan and heat over low heat, stir until combined.
8 Transfer the mixture to a blender and blend for 2 minutes on high. 9 Pour the filling into the cooled crust and refrigerate for a minimum 4 hours.
10 Decorate with almond flakes (if using) and dark chocolate, slice and serve.

Guacamole

Lets mash that avocado for a perfect guacamole. Recipe here using cocavo oil:

Ingredients:

6 Avocados
2 tbsp COCAVO raw oil
Half red onion chopped
1 cup chopped cherry tomatoes
2 large cloves of garlic crushed
2 chillies chopped
Juice of one lemon
Salt and pepper to taste
Coriander to garnish

Method:

1 Halve and remove stone from the Avocados and scoop out into a bowl.
2 Mash avocados.
3 Add in melted COCAVO oil, and mix until combined.
4 Add in the rest of the ingredients and mix gently, just enough so that all the ingredients are evenly distributed.
5 Serve in a bowl with corn chips, cucumber, carrots, toasted bread or anything else you desire!

Turmeric and Lemon Cauliflower Salad

This healthy salad will surely put a smile to you face. Check out the recipe here:

Ingredients:

1 Head of cauliflower
1 Can chickpeas (rinsed and drained)
1 Tbsp ground turmeric
1 Tbsp cumin seeds
1 Tbsp fennel seeds
1/2 cup COCAVO Turmeric & Lemon
Juice of half a lemon
Salt and pepper to season

Method:

1 Cut cauliflower into florets.
2 Place cauliflower on a lined baking tray with the chickpeas.
3 Pour over COCAVO oil, turmeric, lemon juice and cumin and fennel seeds.
4 Toss cauliflower and chickpeas until all are coated evenly.
5 Season.
6 Place in preheated oven 180C, for around 30mins.

Dressing:

1/4 Aioli or Mayonnaise
1 tbsp COCAVO Turmeric & Lemon
Juice of half a lemon
Salt and pepper to season

Method:

1 Place all ingredients in a bowl and mix together.
2 Leave in the fridge before serving.

Topping:
Pomegranate seeds ( from one pomegranate )
1 avocado a handful of coriander

Arrange cooked cauliflower and chickpeas on a platter, drizzle over the dressing and sprinkle avocado, pomegranate and coriander.
